Killer Beef|Sirloin Gyu

After a few weeks in California the meat is rather ordinary. I purchased some organic beef, raised in a natural way, the meat is grass-fed and chewy. I think back to Japanese gyu, the ultimate balance between marbled fat and the meat itself. The main difference lies within the price, a giant Belcampo steak (1.7lbs) costs $100 dollars, and a Japanese sirloin steak for just under one pound is $100.
