This is an avid serious, intense and dedicated wine bar owner who rolls the glasses to aerate the wine and produce and control the aromas. It is interesting but I am not sure how real. Anyway, you decide for yourself, at least he is passionate and takes the time to do what he thinks is best without interfering with the wine.
