The restaurant Focus is as good as it gets, the recipes are balanced and the flavors distinctive, a dream. This is Chinese cabbage (a fast brine of 10 minutes) and served with bison, sesame and herbs. I so happened to have some truffles from my trip to Italy. The combination worked, this truffle was more ripe, as you can see the color is slightly more brownish.
