Think caviar and now think Matsutake mushrooms – wild picked and expensive as hell. I was communicating with the trade today and as its the end of the season a 50g mushroom is as much as $600. These are from Mexico and you can find imported Matsutake but they are in no way comparable. The season is September and October and watch out for Chinese mushrooms as they lack flavor and taste.
