Sugar Coated Violets

The symbol of ancient Athens, the violet was believed to moderate anger, strengthen and comfort the heart, and promote refreshing sleep. Garlands of its blossoms worn around the heads of revelers were supposed to dispel wine fumes and prevent dizziness and headaches. In fact chemical analysis of the plant reveals the presence of salicylic acid, the raw material for aspirin.

The leaves, which have antiseptic properties, can be used in ointments or as poultices for bruises and, when made into a tea or syrup, have been taken for internal inflammations and coughs.

In fact not all sugar coatings are artificial, and in some cases violet flower extract can be used. Clearly violets are edible when fresh and their color and aroma vary greatly depending on their geographic locations.

The fragrant violets are used to make bright purple liqueur Creme de Violette. But here these grapes are likely made with some food colouring as its easy and practical when making batches of coated sugar candies.

In fact crystallized as beautiful candies such as these are amazing and our favourites: http://mesubim.com/2015/01/27/coussin-de-lyon/
