Sushi is a great food and after months of travel I find myself counting the spots of Kohada. The fish, rice and nikiri are all perfectly balanced by shiso leaf. The intimacy of food that was once a street food, but then again, sushi on the streets was just part of the evolution and has very little to do with what you find today at this level.
