Last night we were invited for Jidori chicken from Saga prefecture, a local breed that feeds on oyster shells. Jidori chicken refers to a type of mixed-breed domestic free-range chicken, a pure breed chicken that is absolutely superb.
The chickens are fed an all-vegetarian diet except for oyster shells that are crushed for the chickens and this diet gives a certain clarity and aroma to the broth.
You see in the photos nira green chives that are soaked and cooked in the broth and eaten in ponzu that is made with niboshi, shoyu, etc. The the next course are dumplings and to follow tsukemen – noodles that are dipped into the broth to cook and then slurped up after placing them into a ponzu. The cooked chicken and the sprouts and onions (in the photos below) are condiments. This meal was delicious 🙂
