Nice black hair cow settles onto the girl at our local favorite restaurant. The tenderloin is hands down my favorite part of the cow in Japan. I do appreciate the fact that most restaurants selling steak have two cuts: tenderloin and sirloin. The tenderloin is still fatty and dense in flavor yet not heavy-handed when compared to Sirloin.
