Subida Trieste

The Subida is a little relais hotel in the hills, amidst the most famous Collio Goriziano vineyards. Here they also produce the aceto from grapes, a crisp acidity that will cut and neutralize the gasses on red onion and not only.

This little Relais hotel is owned by Josko and Loredana Sirk. The setting is beautiful, right on the border between Italy and Slovenia, and the restaurant reflects this. In the fall, when a chill in the air, reminds you of childhood days.

It is a simple Trattoria with typical regional cuisine, a combination of Friulian and Slovenian lifestyle and personality. The owners believe Subida is an ideal place for a relaxing, ‘a pause from this chaotic way of living of ours where, for money and success, we so much sacrifice ourselves and our families’.

This is a place where you can still dream with nature and feel yourself floating away in the bubbles of airwaves. Make sure to try the polenta served with sautéed porcini mushrooms and braised wild boar.
