Charcuterie, the term “garde manger” originated in pre-Revolutionary France. At that time, maintaining a large supply of food and beverage was an outward symbol of power, wealth and status. The preserving of food and managing its utilization was the work of “garde manger”, “the guardian of the pantry”.

There is just something about the meticulous way Japanese prepare their foods. This is a simple wine bar, the owner is a fanatic about the way he does things. (obviously)
