I am not sure you can really tell from that photo but there is visible difference in size between the three samples. The size is very relevant in making sake and if you refer to my other posting on sake, you can understand the meaning of rice polishing. The Dassai “39” means that the rice has been polished until it only retains 39% of its original size. It also takes 3 days and 3 nights to perfect this rich and powerful finesse it possesses. The Dassai which is “23” means 23% is retained, and so on.
