This is not a salty dog, it is a salted sea urchin. I often find that sea salt can be dashed over a fish instead of shoyu. It is not uncommon that “white fish” is served with salt. The chef’s choice or the client can ask. I particularly prefer to use a dash of sea salt, as it is less contrasting. Too often shoyu is over whelming and doesn’t give the contrast in taste I prefer.
