Does wine go with Japanese foods?
This is the $24 question.
My opinion is it all depends on what food and which wine but in general the answer is sometimes and no. Of course when it comes to meat the match is 100% but when it comes to fish, it is hard to say that a French wine works. It just has too much aroma and lessens the experience..
Even Japanese sake that is too polished does not match well, as it has too much power and fruit. Sake is very different as it is indigenous so there are a few exceptions to the rule.
Obviously wines that are lean and fresh, more mineral and do not overwhelm the delicate tastes of Japanese cuisine or some wines that are dry work best.
Now think of tuna, a fatty cut and will a Pinot Noir work?
