The chef works with confidence and a swiftness. He is quiet but not shy as his assistant (female) giggles at my Japanese. He smiles too but keeps his head on his counter while cleaning female crabs.
He is preparing for diner service and we are watching him work. He offers us a good view of his technique and he gives us permission to film and photograph. He separates the crabs and dissects them into the appropriate parts. Later he will reassemble the crab back into the shelf, piece by piece with crab meat, eggs and claws. He cuisine is delicious and the overall experience worthy of another visit.
