Dassai Sonosakie was created to be above Dassai 23. Not just competing by rice polishing rate (of course its rice is polished more than that of Dassai 23), every single ingredients and processes were improved to make this sake. It’s best to enjoy it after a few sips of Dassai 23 to see how it’s exceeded the Dassai 23. I guess you will feel a lot of umami and complexity.
