This by far is one of the best preparations I have tasted in sushi. The fish runs in deep waters, and up close it is rich in texture and the contrast in flavor of the “neggi” onions and minced ginger is superb. It rests so beautifully and is a feat of magic to get to the place it belongs without spilling the mountain top. It measures almost in height 40mm and we open approximately 40mm.
