Truffles, be it black or white are all complex. We are often fooled by aromatic oil that is used in most places except in those establishments that can afford to attract clients who know better.
There are so many varieties of truffles you can just imagine. We group them into, species, color and size yet they vary greatly from season to season. Therefore you need years on experience to understand the differences.
They grow underground so you need to understand the growing conditions in order to speak about flavor, taste and quality. Sometimes the excellent black can intrigue you more than you think. Tonight I tasted a black that is considered to be the first of the season, Male brun and it was rich, aromatic and had the punch you expect.
