Cavolo nero

It is the cabbage of the Tuscans, and in fact its name ‘cavolo nero’ or black cabbage, in Italian evokes a certain hardy toughness. The Tuscans in fact a freeze seems to soften it, you can see why it is still today considered one of the vegetables most representative: few pretensions but a lot of taste! rifatto con le salcicce, a good way to prepare it.
