People shutter when they see them live, all shinny and alien like. But this was the greatest fish course of the entire trip in Italy – Shako sushi (mantis shrimp) in Osteria Cera. I entered the kitchen to see the fish service and there was fresh Shako right in front of me. I couldn’t believe how good it looked and I asked the chef for a taste. I appreciate the intuitive skill of the chef who produces fish that is just damn good!
The Squilla or “Shako” is a delicacy that appears on the sushi bar counters in Tokyo from April to Summer, although different varieties can be found in Hokkaido markets almost all year round.
