Inject it!


I am waiting for a proper medical syringe as my second Poulet de Bresse is waiting patiently. I measure out the .8% of salt to the weight of the bird which has been consistently 1200grams/1300grams.

Quite impressive that the Poulet are more or less of a consistent size which makes perfect sense for the breed. The main point today is to understand how to improve the process as my friend refers to me (delivering the syringe) “otaku” which are people obsessed with a specific hobby or thing – now I am ready!

Today I injected the chicken more easily and reached the difficult places as the needle is long, about 7cm. I injected the chicken form both the top and bottom the thighs. The chicken is very plump.
