These are both Japanese eggs; one (top) is 63 grams and the other (bottom) is 69 grams. These eggs both make fluffy eggs so I wonder why the eggs in other places make an omelette flat.I begin to wonder if the free range make any difference because in Europe, most chickens are caged to produce eggs; does this have any influence on the quality of the egg itself.
They are both cage-free eggs, and one is organic and the other is not. The white and green package are eggs are from Iwate prefecture in Tohoku Koiwai Farm http://www.japan-iwate.info/app/location_detail.php?lid=75 and it is non-organic, and the other one is from Yamanashi prefecture near Mt. Fuji Kurofuji Farm http://www.kurofuji.com/index3.html – organic eggs.
