This was one of the crabs we carried back from Hokkaido. The crabs are just amazing in taste and physical appearance. In fact, you can buy very good quality crabs at the Chintose Airport in Sapporo. They offer the Russian origin crabs, i.e. the King Crab variety which are rather dry inside, and over prized, or the hairy crab, which is our choice, the meat supple and juicy.
These crabs were supported by some homemade dipping sauce. The sauce consisted of shoyu, ginger and some vinegar. It is common to add some dashi but in this case I hadn’t made my daily batch.
