Yamagata-gyu is nurtured in the rich clear stream waters gushing from the mountain of gods. The beef is cooked in a broth of konbu red wine and balanced by a coating of aged Mirin, shoyu and sake. The secret is to finish the meat with some kuzu liquid to thicken the sauce but not too much.
