Kanpyo is one of those things that is sacred for a sushi chef. Most occasions in the west we wouldn’t really pay much attention to it, as it’s too sweet and uninteresting. But the pickled gourd, is the signature of a chef who adds his touch to it. For sushi lovers, the principles are simple; the chef’s hand takes you on a journey through the sea and over the land all between his fingers.
