This is a prototype machine I use to experiment making coffee and tea. The electronically temperature controlled pressure allows the barista, to control pre-infusion and absolute and direct control of pressure at any point during extraction. The electronic gauge on the machine displays the pressure during brewing, so by your finger tips, you control the pressure. The electronic gear pump is controlled by the paddle, so essentially you can manipulate the coffee’s taste, paddle it left, the pressure moves up. I am not a professional barista but practice makes you understand the challenges of a professional barista.
