I talked with the Head Chef of restaurant Focus at the Park Hotel Vitznau, it was about more foraging and without a flinch, he takes me into the back of the kitchen to show me a covered plastic box. Opening the top, he raises it to my nose and says, “what do you think” and it is wild garlic flowers. Driving to work, he stops the roadside to nip some buds, flowers from the neighboring hills. They are just natures gift, adding a sparkle to any dish. The scampi and sugar peas are nicely balanced by a light foam. The view below gives you a sense of the surroundings, lake and mountains.
