One kilo of summer black truffles arrived to our lab, and the box was opened with a sense of excitement. There was a superb selection of large and medium-sized black globs. The fragrance was earthy and the flavor was typical of the summer. I froze some of them to preserve the flavor as the aroma is less interesting than the taste in the summer season.
