I was talking with a professor from Caserta, I met her at Vannulo’s organic farm during our first visit there. She was there to pick up her usual weekly yoghurt made from buffala milk. A professor of aesthetics, specializing in landscapes, no wonder she travels there, a perfectly beautiful region surrounded by mountains and the Tyrrhenian sea.
It is said that the cheese from Caserta is not safe after a pollution scare in 2006. The cheese produced there is mostly exported and is made in an industrial way. It was a blow to cheese producers in Caserta, when health authorities found high levels of dioxins, a nasty byproducts of chemical manufacturing, in samples of buffalo milk from farms near Caserta. They have adverse effects even in very small amounts, they persist in the environment for a long time without breaking down and they tend to accumulate in living tissue over time.
