Anyone can cook, everyone does cook, but few combine their skills with their passion and knowledge. I enjoy cooking but I prefer more the process, and searching the finest products all over the globe.

When we lived in France, I was obsessed their poultry, the butcher’s shop and their cooking techniques. France has a deep seeded culture in raising birds, and doing it with a standard that most Europeans would never get to see.

Like the Japanese with fish, you have the French for poultry. The quality of skin and meat is superb, their control over farm conditions, diet leaves an end result leaves with a second to none. These are amazing if you cook them correctly, one minute more and you spoil the texture.
