It is unusual to eat octopus raw, the octopuses skin is removed, the arms of the octopus are completely skinless, no pinkish-red coloration, simply white except for the head bits. It looks like raw fish except the texture and is all about raw octopus. A dash of shoyu, and the small buds of shiso flower adds the necessary contrast in flavor to accent the dish – sip sake and enjoy it.
