Taranome [Sansai]

In the west bitterness is often frowned upon, inedible or undesirable by most people. Taranome, a mountain vegetable, “Sansai”, like many other Japanese mountain vegetables are bitter. They are considered a delicacy found in small quantities, and most commonly used for tempura. I use it in salad, or on its own after a quick sautéing – salt lemon and olive oil.
