Takenoko @ Winter

Takenoko winter type bamboo is considered rare, a very small size compared with the spring and fall types. Weighing at under 200 grams, in the winter they can be over a kilo and each bamboo shoot is costly if grown domestically.

The cooking is very simple as long as you have some nuka, rice bran which is added to the water to draw any bitterness from the bamboo. I cooked it with the husk on and let it cool.
