Too often combinations are created, or invented by chefs or non chefs that make little sense. Of course this is purely subjective, while at the same time, I believe there are certain limitations in combinations. This Torigai, a shellfish topped with neggi, karashi and some ginger, it’s a nice way to enjoy this fish as a variation.
