Silver Blue Anago

The colour of the fish tells us a story, how it lives, where it lives, and what it eats. This style of Anago is different to those types you find abroad in the Americas, or for that matter anywhere else. The technique is boiled and not toasted over a fire, or in a toaster as they do in some establishments. The season for Anago improves as spring breaks and the weather begins to show signs of warming –  in the near future Sakura will rise from the cold.
