“The Cut”

Abalone season starts to improve as the summer nears. The flavours are more delicate and the crunch is still there, as you can see on the leading edge. It is a matter of how the chef cuts his awabi, at which point and place will determine the crunch or not. The cut enhances the taste in many foods and especially raw foods including vegetables and tomatoes.
