Walking in Wholefoods, a woman saw me gazing at the olive oil section. As I picked up Laudemio, a reliable oil made in Tuscany, (the best option available), she asked my opinion about olive oil. I asked her the purpose as she explained; “I have a chef coming over to make fresh orange reduction mixed with olive oil”, so I pointed her to a generic 365 brand that seemed reasonably priced. The problem with olive oil these days, virgin and cold pressed have become generic terms and are no longer a reference to rely on.
After I came home, I thought I would try her idea, so I took these small hybrid petite kumquats, fresh cherry tomatoes, and some rosemary at the finish for contrast. The end result is a blended orange and tomato dressing with a hint of rosemary.
