I miss Elevage, and the owner is a cool well dressed professional, a good sense of humor, and a fine talent behind his collection of Whiskeys, wines and spirits.

I tasted this Kikuhime, produced by an extremely well-known brewery in Ishikawa Prefecture. A very good smooth sake, long lingering with a bouquet of flowers and passion fruit.

This sake is genshu (no alcohol added) and is aged for a year and a quarter and then bottled and released.
