Fennel finocchio Fenouil – recipe

A vegetable that is always a pleasure to enjoy. If you can’t cook, you can make this dish. Take the fennel, cut it as you like lengthways. They oil in the skillet and color the fennel until it gets some color. Then add some fresh orange juice by squeezing it over top.

Let it cook and add some more liquid, water and cover it, simmer and add some paprika and turmeric. These two will give some depth of filed to the color, and cover the top and make sure you reduce slowly until cooked. Add liquid as needed to make sure the fennel keep in a vapor – cover the top.

Once ready they should be soft from top to bottom, and when you color them, makes sure they get some scores of color (maillard) from the skillet.
