Leg of Lamb [ex-shank] Belcampo

The lamb’s leg is a delicious, our last days with Belcampo before we head out to a new experience a civilization. I asked the shank to be cut off, so I could fit the lamb’s leg into a skillet. I colored the meat and then cooked it. This is difficult to get cooked properly due to its thickness and so slow cooking is the best method.
