This well-known butcher is serving many important restaurants including the l’Elysée the Presidents own kitchen. Hugo’s reputation, very proud and he has a good reason to be. He started this business modestly, in the 14th of Paris and slowly but surely developed some of the best foodies in town. I first met Hugo more than 10 years ago (in his old shop) and watched him grow, working hard and through the ranks. He is a meticulous type butcher with a good sense.
