Joel Thiebault’s vegetables find their way onto the finest restaurants and bistros all over Paris. Northwest of the city, he grows his produce on the same 54 acres that his grandparents farmed. His family has been bringing their carts full of magnificent vegetables to the same marketplace in Paris since 1873.
