I was a tomato farmer (kind of), we grew numerous varieties and still we dream to grow them again. The challenge to grow a good tomato is to be there, the insemination and care needed at the spring requires some careful watch over the flowering to get it right. In the summer heat is an enemy and the wind topples the plants.
This is a dream salad, pickled okra, and tomatoes cut and oiled, a touch of salt and fresh bread to sop up the tomato juices. This is what we expect when we think of Greece and luckily there are artisans in Greece, those chefs that respect and adore what nature has to offer.
