The plate, you turn it over and “voila” the Crème brûlée without the brûlée. Begin with the topside, a snitch of bread and black summer truffle, a mouth opener. Then flip it over and enjoy the sweet side.
The reason the sweet side is underneath is because in the old days, you had to finish your main dish before desert, as it was on the underneath side of the dish.
