The size and fish make the difference in colors but both are o-toro: the tuna is an extraordinary fish and certainly if we continue to over-fish we will lose a great sea dweller and lose a great taste.

The Japanese sea near Toyama-Himi is spring and summer fish and the color is more pinkish while the autumn fish is more hokkaido is deeper colored and often more fatty.
