There are cherries and there are cherries. Seven years ago I was frequently in the professional market of Rungis, often in the wee hours of the morning in search of the perfect vegetable. I remember the first cherries of the season and they were as much as 600+ per kilo. You could find imported cherries from Chile but domestic cherries were always very chère and reserved for the finest chefs. In Japan these cherries are amongst the first and are prohibitively expensive as you can see.
