Bastardo Del Grappa /slow food/

The Pedemontana Veneta is an area that lies at the foot of the Dolomite Alps, and the grappa is not grappa as such, and Mount Grappa is a historical mountain playing an important role during the first and second World Wars.

Due to its recipe being not being traceable, this cheese is known as “Bastardo del Grappa”, a hybrid of cheese. Its name was that the a quantity of goat’s milk was added to the cow milk used in its production. It was not unusual to observe the cows in the mountain pastures accompanied by some goats, whose milk was insufficient to be used on its own. Therefore some small producers added it to the cows’ milk, hence a cheese was produced that was not in keeping with the local practice and it is a bastard’s cheese.
