This white truffle is amongst a rare group of truffles found this year weighing in at just over 500g. The average white truffle size is often under 100g and the optimal sizes are 125-250g, or even a little larger but not much more than 250g.

Optimal size includes a truffle size that can be used within a specific time frame of less than a week, easy to handle and shave, and has the good maturity but most importantly perfect aromas. Not too young, not too old as truffles are a living organism, they are always going through changes but best underground and not at the table.
