Aji is not Ají, a spicy Peruvian sauce that often contains tomatoes, cilantro, ají pepper, onions, and water. Aji has been used in Peru since the times of the Incas, who called it uchu.

But this is another Aji (Japanese Spanish Mackerel) and contains no tomatoes. This is a blue backed fish, tremendously tasty, filled with umami, intense on the palate, and the kick of ginger and spring onion make it a memorable taste.
