This is Chūtoro, a wonderful and less fatty cut of the tuna belly’s upper belly section. It is less oily than supreme tuna belly o-toro and has a lighter taste, yet it is rich in flavor. Located on the side of the fish, it has a different look to o-toro and the kama-toro.
The kama-toro is at the front side of the o-toro and is more expensive and has marbling patterns that resemble a hanger steak. This cut is just too fatty and the fat overwhelms your palate.
