Ikura not Ikura

I never eat salmon while the rest of the world feasts on it. A fish that was once considered the cream of the crop has become famed to death. While most of is Chilean farmed, they continue to suffer from disease problems and high feed costs that compound an overall production efficiency disadvantage.

This is wild caught salmon roe, and its wonderful when the quality is there. These are outstanding salmon caviar eggs and you see the quality by looking at their condition. The eggs are all without any kind of bruises or perforations and the eggs are plump. Served with some diluted shoyu they are a dream!
